I kid you not, this is the best salmon I've ever cooked!
This has officially become one of my favorite dishes to make. It's easy, it's healthy and it's sooooo good. Last night was the first time I made this because Brian and I were adamant about trying to be a little healthier.
Not only is this really simple to make, it's also very, very delicious! Brian even sent me a message soon after he ate it for lunch at work just to praise the dish--yup, it's THAT good.
Ingredients
- 1 lb salmon filet
- 2 tbsp lemon juice
- 2 tbsp parsley
- 1/8 tsp ground black pepper
- 1.5 tsp mustard (I used Inglehoffer Stone Ground Mustard. It's the best so and I strongly believe it made the difference in taste)
- 3 cloves of garlic, crushed
- 1/2 tsp salt
- 1/8 cup olive oil
- Lemon slices for presentation purposes!
Best mustard, ever. I kid you not.
Cooking Directions
1. Preheat the over to 450 degrees F
2. Slice the salmon into even parts
3. In a shallow bowl, combine 2 tbsp parsley, 2 tbsp lemon juice 3 cloves of crushed garlic, 1.5 tsp mustard, 1/2 tsp salt, 1/8 cup olive oil and mix well.
4. Generously wrap your salmon with the mix and top them with the lemon slices!
5. Bake the salmon for 15 minutes (be sure not to overcook it!)
6. Serve with brown rice and string beans and wait for the praises!
